The POPsicle Recipes: Japanese Cheesecake with Spark

This week on The POPsicle podcast, Aloysius and I really connected with the movie’s search for purpose and spark. When coming up with a recipe, what stood out to me was the fun designs that the characters had, especially the souls looking for their purpose before they come to Earth. Their designs made me think about the fun viral craze of jiggly cheesecakes! I wanted to make my own version, but give it the same fun colors and flavors that reminded me of Soul. I experimented with colors and essences, and now you get to enjoy this fun bubble-gum cake!

  1. Preheat oven to 320 degrees Fahrenheit

  2. In a pot, whisk butter, cream cheese, and milk until all melted. Remove from heat and cool.

  3. In a large bowl, whisk egg yolks until smooth. Slowly drizzle melted cream cheese mixture until evenly combine, whisking.

  4. Sift flour and cornstarch into mixture and whisk.

  5. In your mixer bowl, beat egg whites until soft beaks form. Gradually add sugar. Also add vanilla and bubblegum extracts.

  6. Fold 1/4 of the egg whites into the yolks, and repeat until both whites and yolks are combined.

  7. Add your food coloring until you have your desired blue or green color (will need to counteract the yellow yolk color with the blue)

  8. On a round cake pan, grease the bottom and line bottom and sides with parchment paper.

  9. Pour the cake batter into the round pan and tap to avoid bubbles.

  10. Put the cake pan in a larger roasting pan with paper towels on the bottom, and fill roasting pan with hot water (about an inch)

  11. Put in oven and bake for 25 minutes. Then, reduce the heat to 280 degrees and bake for another 50-55 minutes until cake has risen.

  12. Remove from oven, and carefully invert cake with your dominant hand and peel off paper.

  13. Place on a plate, jiggle, and have fun!

  • 7 tablespoons butter

  • 4 oz. cream cheese

  • 1/2 cup milk

  • 8 egg yolks

  • 1/4 cup cake flour

  • 1/4 cup cornstarch

  • 13 egg whites

  • 2/3 cup granulated sugar

  • 1 tsp. vanilla extract

  • 2 tsp. bubble gum flavor

  • blue and green food coloring
