The POPsicle Recipes: “Pop” Tarts for Steve Trevor

This week on The POPsicle podcast, Arri and I were able to debunk the latest film in the DCU, Wonder Woman 84. We had a lot of laughs and a whole lotta more questions about some of the choices they made in this film. But that’s besides the point! The one iconic food moment in the movie that I wanted to call out was when Steve Trevor manifested himself into reality and ate a “pop” tart for the first time. So, I took it as a challenge for myself to make a homemade toaster pastry as well! I had a blast making these, and no - you cannot put these in your toasters… BUT it was still delicious and loved eating these for a breakfast pastry! You can use any jam you like for the filling, but I decided to go with lemon or apricot to allude to Themyscira’s pseudo-mediterranean regionality.

  1. Pulse sugar, salt, flour in a food processor to combine. Add butter in pea sizes to pulse, until flour starts to look crumbly

  2. Whisk 2 eggs and 4 tablespoons ice water in a small bowl, and drizzle into the food processor with the flour mixture until dough starts to clump

  3. Turn dough out on a work surface and knead, adding tablespoons of water as needed until dough comes together

  4. Pat dough into a rectangle and wrap in plastic, and chill for at least an hour

  5. Preheat oven to 350 degrees

  6. Roll out dough on a lightly floured surface until about 1/4” thick

  7. Start cutting dough into 4” x 3” rectangles

  8. Beat egg in a bowl with a tablespoon of water to make an egg wash. Brush egg on the edges of half of the rectangles, spoon jam in the center, and then press another rectangle on top

  9. Using a fork, crimp the edges, and cut three slits in the middle of a pop tart with a paring knife

  10. On a baking sheet lined with parchment paper, bake until crust is golden brown, around 20-25 minutes

  11. When done baking, let cool on a wire rack for at least an hour (trust me, I burned myself with the jam)

Makes 8 pastries

  • 1 tablespoon sugar

  • 1 1/2 teaspoon kosher salt

  • 3 cups all purpose flour

  • 1 1/2 sticks unsalted butter

  • 3 large eggs

  • 1/2 cup apricot or lemon jam
