The POPsicle Recipes: Instant Pho Love

This week on The POPsicle podcast, Allie and I discuss our next book in our POPsicle Book Club, A Pho Love Story by Loan Le. And of course, I couldn’t help myself but create my own pho recipe! Now this is by no means restaurant quality, the Mais and the Nguyens wouldn’t approve, but if you’re the gal on the go and need a quick dinner and you have an eager Instant Pot, then you’ll love this recipe! Using store-bought ingredients, you’re ready to make pho!

An easy pho you can get ready in an instant!

  1. In your Instant Pot, set to saute and add oil, and anise, cinnamon, and cloves, and saute for 5 minutes until fragrant

  2. Cut chicken bones into pieces if needed, and place in instant pot

  3. Add green onion stalks, and basil stalks, and fill pot with water

  4. Add fish sauce, turn off Instant Pot, and cover + seal

  5. Set Instant Pot to start, high pressure, for 60 minutes. Once finished, let the pot manually de-pressure for 25 minutes, and then flip Seal to Vent

  6. While stock is cooking, prepare bowls with cooked rice noodles, slices of chicken breast and thighs, basil, and bean sprouts

  7. When stock is cooked, separate stock from bones and aromatics, and flavor the stock to taste (taste and season with salt/pepper, repeat until you have your desired flavor)

  8. Pour stock into your prepared bowls, and top with green onion tips

Instant Pho

  • 1 rotisserie chicken (separate breasts and leg quarters from rest of chicken)

  • 6 cups water (or enough to fill Instant Pot)

  • Star anise, 2 pods

  • Cinnamon sticks, 2 sticks

  • Cloves, 2 pods

  • Rice noodles, cooked

  • Bean sprouts, 1/2 cup rinsed

  • Green onions, 3 stalks, separate root from green tips

  • Red onion, 1/2 sliced thinly

  • Basil, separate leaves from stalks

  • Fish sauce, 1 tablespoon
